Dessert Mixes

Dessert mixes are easy
to prepare and can be nearly fat free. You can make a pie, dip, spread or cheeseball
with any of these mixes. For a pie, just add one packet of
dessert mix to 8 ounces (227 grams) of softened cream cheese and
blend well (if you have a microwave, 15 to 20 seconds on high should soften
the cheese; otherwise, let it sit at room temperature until
softened). Add 8 ounces (227 grams) of Cool Whip whipped topping
(or other non-dairy whipped topping) and blend well. Spoon the
mixture into a standard graham cracker pie crust and smooth evenly.
Refrigerate the pie for at least four hours before serving. If desired,
you may top the pie with fresh fruit, toasted coconut, chopped
peanuts, or chocolate curls (select the topping to complement the
flavor of your pie). You can also use a butter cookie or chocolate cookie
crust for a different taste. For a dip, follow the same directions as for a
pie, but use fat free whipped topping for a softer texture that makes it
easy to dip. Refrigerate for at least one hour to allow the flavors to
blend. Dips are especially delicious with fresh fruit, but animal crackers
and small cookies or cake chunks work very well, too. For a quick dessert,
spoon fresh fruit and dip over a slice of pound cake or angel
food cake. For a more elegant dessert, layer cake chunks with fresh fruit
and dip in a clear glass parfait dish. For a spread, simply add a package of
dessert mix to 8 ounces (227 grams) of softened cream cheese and blend well.
Spreads are delicious on graham crackers, nut and fruit breads, or warm
biscuits. For an elegant dessert cheeseball, add a package of dessert mix to
8 ounces (227 grams) of softened cream cheese and one 4 ounce (113 grams)
stick of butter. Form into a ball, wrap in plastic wrap, and refrigerate at
least one hour or until firm. Roll in cookie or graham cracker crumbs or
chopped nuts. Cheeseballs are delicious spread on graham crackers, including
flavored varieties, and nut breads or pound cake. (All prices are in US dollars)
NOTE: Do not substitute fat free whipped topping when
making a pie, as this will not stiffen properly. Substituting regular or low
fat whipped topping when making a dip will make the consistency stiffer.
